- 1.5 lbs boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup spinach
- 1/4 cup sun-dried tomatoes, chopped
- Salt and pepper to taste
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs until browned on both sides. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet.
- Bring to a simmer, then stir in Parmesan cheese until melted and the sauce is smooth.
- Return chicken thighs to the skillet.
- Stir in spinach and sun-dried tomatoes.
- Cover and simmer for 10-15 minutes, or until chicken is cooked through and spinach is wilted.
- Season with additional salt and pepper if needed.
- Serve hot.
