This One-Pot Creamy Garlic Tuscan Chicken is a weeknight dinner winner. It’s an easy and flavorful meal that comes together quickly in a single pot.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs until browned on both sides. Remove chicken from skillet and set aside.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet.
  6. Bring to a simmer, then stir in Parmesan cheese until melted and the sauce is smooth.
  7. Return chicken thighs to the skillet.
  8. Stir in spinach and sun-dried tomatoes.
  9. Cover and simmer for 10-15 minutes, or until chicken is cooked through and spinach is wilted.
  10. Season with additional salt and pepper if needed.
  11. Serve hot.

  • For a richer flavor, you can use chicken breasts instead of thighs.
  • Add a squeeze of lemon juice at the end for brightness.
