Make this flavorful pasta dish entirely in one pot. It features a creamy sauce made with goat cheese and sweet roasted tomatoes for easy cleanup and deep flavor.

  • 1 pound pasta (penne or rotini work well)
  • 1 pint cherry or grape tomatoes
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 4 ounces soft goat cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius).
  2. Toss the cherry tomatoes with half of the olive oil, a pinch of salt, and pepper on a small baking sheet. Roast for 15 minutes until slightly blistered. Set aside.
  3. In a large, deep pot or Dutch oven, combine the dry pasta, minced garlic, vegetable broth, remaining olive oil, oregano, and red pepper flakes (if using).
  4. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for about 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is cooked al dente and most of the liquid is absorbed.
  5. Remove the pot from the heat. Stir in the heavy cream, crumbled goat cheese, and Parmesan cheese until the cheese melts and creates a smooth, creamy sauce.
  6. Gently fold in the roasted tomatoes.
  7. Taste the pasta and adjust seasoning with salt and pepper as needed.
  8. Serve immediately, garnished with fresh basil.

Notes

  • If the sauce seems too thick after adding the cheese, add a splash of hot water or extra broth until you reach your desired consistency.
  • You can roast the tomatoes while the pasta is cooking if you prefer to skip the preheating step, but the timing will be tighter.
  • Use a sturdy wooden spoon to stir the pasta while it cooks to prevent breaking.
