  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 oz fresh spinach
  • Salt and freshly ground black pepper to taste

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  5. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Reduce heat to medium-low. Stir in the heavy cream and Parmesan cheese until the cheese is melted and the sauce is smooth.
  7. Return the chicken to the skillet. Cover and simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  8. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  9. Season with salt and pepper to taste. Serve hot.
