- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 12 ounces fettuccine pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish (optional)
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken pieces and cook until browned on all sides.
- Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil.
- Add fettuccine pasta, breaking it in half if necessary to fit. Stir to submerge the pasta.
- Reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente.
- Stir in heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
- Cook for an additional 2-3 minutes, stirring, until heated through.
- Garnish with fresh parsley if desired before serving.
Notes
- For a thicker sauce, you can simmer uncovered for a few extra minutes.
- Feel free to add your favorite vegetables like broccoli or spinach.
- If you don’t have heavy cream, half-and-half can be used, but the sauce may be thinner.
