  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 12 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides.
  3. Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Add fettuccine pasta, breaking it in half if necessary to fit. Stir to submerge the pasta.
  6. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente.
  7. Stir in heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
  8. Cook for an additional 2-3 minutes, stirring, until heated through.
  9. Garnish with fresh parsley if desired before serving.

Notes

  • For a thicker sauce, you can simmer uncovered for a few extra minutes.
  • Feel free to add your favorite vegetables like broccoli or spinach.
  • If you don’t have heavy cream, half-and-half can be used, but the sauce may be thinner.
