1 tablespoon olive oil
1 medium yellow onion, finely chopped
2 cloves garlic, minced
1 1/2 cups long-grain white rice (Basmati or Jasmine), rinsed
2 1/2 cups vegetable broth
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
Zest of 1 lemon
2 tablespoons fresh lemon juice
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Stir in the rinsed rice, turmeric, cumin, salt, and pepper. Cook for 1 minute, stirring constantly to coat the rice grains.
Pour in the vegetable broth. Bring the mixture to a boil.
Once boiling, immediately reduce the heat to low, cover the pot tightly, and simmer for 15 minutes without lifting the lid.
Remove the pot from the heat and let it stand, covered, for an additional 10 minutes. Do not lift the lid during this resting period.
Fluff the rice gently with a fork. Stir in the lemon zest, lemon juice, fresh parsley, and fresh dill.
Serve immediately as a side dish.
Notes
Rinsing the rice removes excess starch, helping you achieve fluffier grains.
For a complete meal, stir in 1 cup of drained chickpeas or white beans after the rice has rested.
If you prefer a richer color, add a small pinch of saffron threads along with the turmeric.
