One-Pot Moroccan Chickpea Stew

A quick and flavorful one-pot stew featuring tender chickpeas, vibrant vegetables, and aromatic Moroccan spices. Perfect for a weeknight vegan meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon turmeric
  • Pinch of cayenne pepper (optional)
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 cup vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped zucchini
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, cumin, cinnamon, ginger, turmeric, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  3. Stir in diced tomatoes, chickpeas, vegetable broth, carrots, and zucchini.
  4. Bring the stew to a boil, then reduce heat, cover, and simmer for 20 minutes, or until vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier stew, add more cayenne pepper.
  • Feel free to add other vegetables like bell peppers or sweet potatoes.
  • Serve with couscous or crusty bread for a complete meal.
