1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1 cup orange juice, fresh squeezed preferred
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
1/4 cup chopped fresh cilantro, for garnish
Cooked rice, for serving
Instructions
In a bowl, toss chicken pieces with cornstarch, salt, and pepper.
Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
Add minced garlic and grated ginger to the skillet and cook until fragrant, about 30 seconds.
Pour in orange juice, soy sauce, rice vinegar, and honey. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Return chicken to the skillet and simmer for 5-7 minutes, or until sauce has thickened and chicken is cooked through.
Stir in sesame oil.
Serve immediately over cooked rice, garnished with fresh cilantro.
Notes
For a spicier kick, add a pinch of red pepper flakes with the garlic and ginger.
If you don’t have fresh ginger, you can use 1 teaspoon of ground ginger.
Adjust sweetness by adding more or less honey to your preference.
