1/4 cup salsa, drained well
1/2 teaspoon cumin
1/4 teaspoon chili powder

12 corn tortillas (6-inch size)
2 tablespoons vegetable oil or cooking spray
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
In a medium bowl, combine the shredded chicken, softened cream cheese, drained salsa, cumin, chili powder, and salt. Mix until the filling is uniform.
Warm the corn tortillas briefly in the microwave (about 20-30 seconds) or wrapped in a damp paper towel in the microwave to make them pliable. This prevents cracking when rolling.
Place about 2 tablespoons of the chicken mixture near one edge of a warm tortilla.
Roll the tortilla tightly around the filling. Secure the seam with a toothpick if necessary to prevent unrolling during baking.
Place the rolled taquitos seam-side down on the prepared baking sheet.
Lightly brush the tops of the taquitos with vegetable oil or spray them thoroughly with cooking spray for crispiness.
Bake for 15 to 20 minutes, or until the taquitos are golden brown and crisp.
Remove the toothpicks before serving. Serve hot with your preferred toppings.
Notes
To ensure the taquitos stay rolled, press the filling firmly into the center of the tortilla before starting your roll.
If you prefer a spicier filling, add a dash of hot sauce to the chicken mixture.
For extra crispiness, you can flip the taquitos halfway through the baking time.
