3 lbs small potatoes (like Yukon Gold or red potatoes)
3 tablespoons olive oil
2 tablespoons melted butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 cup grated Parmesan cheese
Instructions
Preheat your oven to 425 degrees Fahrenheit. Lightly grease a large baking sheet.
Place the potatoes in a large pot and cover them with cold, salted water. Bring the water to a boil and cook the potatoes until they are fork-tender, about 15 to 20 minutes. Drain the potatoes well.
Arrange the boiled potatoes on the prepared baking sheet, leaving space between them.
Using the bottom of a sturdy glass or a potato masher, gently press down on each potato until it is flattened to about 1/2 inch thickness. Do not smash them completely flat.
In a small bowl, mix the olive oil, melted butter, salt, pepper, and garlic powder. Brush this mixture evenly over the top and sides of the smashed potatoes.
Sprinkle the grated Parmesan cheese evenly over the top of each flattened potato.
Bake for 20 to 25 minutes, or until the edges are golden brown and the Parmesan cheese forms a crisp crust.
Serve immediately.

For extra crispiness, you can broil the potatoes for the last 1 to 2 minutes, watching closely to prevent burning.
Use fresh grated Parmesan cheese for the best melting and crust formation.
If your potatoes are not tender enough after boiling, they will break apart when you smash them.
