Ingredients

Scale
  • 2 medium zucchinis, trimmed and cut into 1/2-inch thick sticks
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine Parmesan cheese, flour, garlic powder, salt, and pepper.
  3. In another shallow dish, whisk the egg.
  4. Dip each zucchini stick into the beaten egg, letting any excess drip off.
  5. Dredge the egg-coated zucchini stick in the Parmesan mixture, pressing gently to ensure it’s well coated.
  6. Place the coated zucchini sticks in a single layer on the prepared baking sheet.
  7. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.

Notes

  • For extra crispiness, you can add a tablespoon of panko breadcrumbs to the Parmesan mixture.
  • Serve immediately with your favorite dipping sauce, such as marinara or ranch.
