1 pound salmon fillet
1/4 cup grated Parmesan cheese
2 tablespoons breadcrumbs
1 tablespoon chopped fresh parsley
1 teaspoon lemon zest
1 clove garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Pat the salmon fillet dry with paper towels.
In a small bowl, combine the Parmesan cheese, breadcrumbs, parsley, lemon zest, and minced garlic.
Drizzle the olive oil over the salmon and spread it evenly.
Press the Parmesan mixture onto the top of the salmon, ensuring it’s well coated.
Season with salt and pepper.
Place the salmon on a baking sheet lined with parchment paper.
Bake for 12-15 minutes, or until the salmon is cooked through and the topping is golden brown.
Serve immediately.
Notes
For extra flavor, you can add a pinch of paprika to the Parmesan mixture.
If you don’t have fresh parsley, you can use dried parsley, but use less (about 1 teaspoon).
Serve with your favorite side dishes like roasted vegetables or a fresh salad.
