A simple recipe for moist quick bread featuring fresh summer peaches and topped with a buttery streusel.

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cups fresh peaches, diced (about 2 medium peaches)
  • For the Streusel: 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the 1 3/4 cups flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Alternate adding the dry ingredients mixture and the buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the diced fresh peaches.
  6. Prepare the streusel: In a small bowl, combine the 1/2 cup flour and brown sugar. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  7. Pour the batter into the prepared loaf pan. Sprinkle the streusel topping evenly over the batter.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • If you use frozen peaches, do not thaw them; add them directly to the batter.
  • For a glaze, whisk 1 cup powdered sugar with 2 tablespoons milk or lemon juice and drizzle over the cooled bread.
  • If fresh peaches are unavailable, you can substitute 1 1/2 cups canned, drained peaches.
