6 medium fresh peaches, peeled and sliced
1/4 cup granulated sugar (for fruit)
1 tablespoon cornstarch
1 teaspoon lemon juice
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup rolled oats
1/2 cup packed light brown sugar (for topping)
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into small cubes
Instructions
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish.
In a large bowl, combine the sliced peaches, 1/4 cup granulated sugar, cornstarch, lemon juice, and cinnamon. Toss gently to coat the peaches evenly.
Pour the peach mixture into the prepared baking dish and spread it into an even layer.
In a separate medium bowl, whisk together the flour, rolled oats, brown sugar, nutmeg, and salt for the topping.
Cut the cold butter into the dry topping ingredients using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Sprinkle the crumble topping evenly over the peaches in the baking dish. Do not press the topping down.
Bake for 35 to 45 minutes, or until the topping is golden brown and the fruit filling is bubbly around the edges.
Remove the crumble from the oven and let it cool for at least 15 minutes before serving.
Notes
If you use frozen peaches, do not thaw them first; increase the baking time by about 10 minutes.
For an extra crisp topping, chill the topping mixture for 15 minutes before sprinkling it over the fruit.
Serve warm with vanilla ice cream or a dollop of whipped cream.
