1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup creamy peanut butter
1 1/2 cups peanut butter cups (chopped or whole mini cups)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the 1 cup of creamy peanut butter until fully incorporated into the dough.
Scoop the dough into balls (about 2 tablespoons each). Flatten slightly.
Press a whole peanut butter cup into the center of each dough ball, or press chopped pieces into the top.
Place cookies on the prepared baking sheets, spacing them 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are set but the centers are still soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a stuffed cookie, completely encase the peanut butter cup in the dough before baking.
Mini peanut butter cups work well for topping or mixing directly into the dough.
If you prefer a flatter cookie, chill the dough for 30 minutes before scooping.
