  • 1/2 cup peanut butter
  • 1/4 cup protein powder (whey or plant-based)
  • 1/4 cup sugar or maple syrup
  • 1/4 cup milk (dairy or non-dairy)
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a muffin tin.
  2. In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the peanut butter, sugar or maple syrup, milk, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. If using, gently fold in chocolate chips or chopped nuts.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
