  • 1 cup light corn syrup
  • 1/2 cup packed brown sugar

  • 1 1/2 cups pecan halves

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in 1 large egg and 1 teaspoon vanilla extract until combined.
  4. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Roll the dough into small balls (about 1 inch) and place them on the prepared baking sheets. Press a slight indentation into the center of each dough ball using your thumb or the back of a spoon.
  6. For the filling, whisk together the corn syrup, brown sugar, 2 tablespoons melted butter, 1 teaspoon vanilla extract, and 1/4 teaspoon salt in a small saucepan. Heat over medium heat, stirring constantly, until the mixture just simmers. Remove from heat.
  7. Whisk the 2 lightly beaten eggs into the warm syrup mixture slowly to temper them.
  8. Stir in the pecan halves until they are coated.
  9. Spoon the pecan filling evenly into the indentations of the cookie dough balls.
  10. Bake for 12 to 15 minutes, or until the edges of the cookies are lightly golden and the filling is set.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
