1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
Red food coloring
Yellow food coloring

Black food coloring
Royal icing (prepared or store-bought)

Instructions
Whisk flour, baking powder, and salt together in a bowl. Set aside.
Cream softened butter and sugar in a large bowl. Beat until light and fluffy.
Beat in eggs one at a time, then stir in vanilla extract.
Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
Divide dough into two portions. Wrap each portion in plastic wrap and chill for at least 30 minutes.
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
On a lightly floured surface, roll out one portion of dough to 1/4-inch thickness.
Cut dough into rectangular pencil shapes using a knife or cookie cutter. Create a pointed tip at one end for the pencil lead.
Place cookies on prepared baking sheets.
Bake for 8-10 minutes, or until edges are lightly golden.
Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Prepare royal icing. Divide icing into separate bowls.
Tint one portion of icing yellow for the main pencil body.
Tint another portion red for the eraser.
Tint a small portion pink for the eraser band.
Tint a very small portion black for the pencil lead.
Outline and flood the pencil cookies with yellow icing for the main body. Let dry completely.
Outline and flood the top portion of the cookies with red icing for the eraser. Let dry completely.
Pipe a thin pink line between the yellow and red sections for the eraser band. Let dry.
Pipe a small black triangle at the pointed end of the cookie for the pencil lead. Let dry.
Once all icing is dry, your pencil sugar cookies are ready to enjoy or share.

Ensure cookies are completely cool before decorating to prevent icing from melting.
Royal icing can take several hours to dry completely, depending on humidity.
For crisp edges, chill cut cookie dough shapes for 10-15 minutes before baking.
