  • 6 cups high-quality chicken broth
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/2 cup small pasta (pastina or acini di pepe)
  • 1/2 cup shredded cooked chicken (optional)
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Juice of 1/2 lemon (added at the end)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Sauté until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and dried oregano. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth. Bring the mixture to a boil.
  5. Add the small pasta and the cooked chicken, if using. Reduce heat and simmer according to pasta package directions, usually 8 to 10 minutes, until the pasta is tender.
  6. Season generously with salt and pepper.
  7. Remove the pot from the heat. Stir in the fresh parsley and the fresh lemon juice.
  8. Serve immediately while hot.

  • You make this soup best by using your favorite, flavorful homemade chicken broth.
  • For an extra soothing feel, add an extra squeeze of fresh lemon just before serving.
  • If you do not have pastina, small diced noodles work well too.
  • This soup freezes well, but add the lemon juice only after reheating.
