A simple and spicy Italian pasta dish, perfect for a quick and flavorful meal using pantry staples.

Ingredients

  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (or more, to taste)
  • 1 (28 ounce) can crushed tomatoes
  • Salt to taste
  • Fresh basil leaves, for garnish (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cook penne pasta according to package directions until al dente. Drain, reserving about 1 cup of pasta water.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes to the skillet. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Pour in the crushed tomatoes. Stir well and bring to a simmer.
  5. Reduce heat to low and let the sauce simmer for at least 10 minutes to allow flavors to meld. Season with salt to taste.
  6. Add the drained penne pasta to the skillet with the sauce. Toss to coat the pasta evenly.
  7. If the sauce seems too thick, add a little of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
  8. Serve hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.

Notes

  • Adjust the amount of red pepper flakes to control the spice level.
  • For a richer sauce, you can add a splash of heavy cream or a knob of butter at the end.
  • This dish is excellent with a side salad or crusty bread.
