  • 1.5 lbs flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 large yellow onion, cut into wedges
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 1 teaspoon minced fresh ginger
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)

Instructions

  1. In a bowl, toss the sliced steak with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Set aside for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the steak in a single layer (work in batches if needed) and cook for 1-2 minutes per side until browned. Remove the steak and set it aside.
  3. Add the onion and bell peppers to the skillet. Stir-fry for 3-4 minutes until slightly tender-crisp.
  4. Add the minced ginger and garlic to the vegetables and cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together the beef broth, 1/4 cup soy sauce, brown sugar, Worcestershire sauce, and sesame oil. Pour this mixture into the skillet. Bring to a simmer.
  6. Stir the cornstarch slurry and pour it into the simmering sauce, stirring constantly until the sauce thickens, about 1 minute.
  7. Return the cooked steak to the skillet. Toss everything together until the steak is coated and heated through, about 1 minute.
  8. Serve immediately over hot rice or noodles.

  • For the most tender beef, slice the flank steak thinly against the grain.
  • Do not overcrowd the pan when searing the beef; this ensures it browns instead of steams.
  • Use a mix of red, green, and yellow bell peppers for color variation.
