  • 1 cup mayonnaise
  • 1/4 cup pickle juice (from the dill pickle jar)
  • 2 tablespoons yellow mustard
  • 1 tablespoon sugar
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon black pepper
  • 1 cup chopped dill pickles
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 hard-boiled eggs, chopped (optional)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse well with cold water to stop the cooking process. Set aside.
  2. In a large bowl, whisk together the mayonnaise, pickle juice, yellow mustard, sugar, dried dill weed, and black pepper until smooth. This creates your dressing.
  3. Add the cooled pasta, chopped dill pickles, celery, and red onion to the dressing. If using, add the chopped hard-boiled eggs now.
  4. Gently fold all ingredients together until the pasta is evenly coated.
  5. Cover the bowl and refrigerate for at least 2 hours, allowing the flavors to meld. Taste and adjust seasoning before serving.
