  • 2 tablespoons vegetable oil
  • 1 cup diced cooked chicken or shrimp (optional)
  • 1/2 cup chopped onion
  • 1 cup diced fresh pineapple
  • 2 cups cooked, cold day-old white rice
  • 1/2 cup frozen peas and carrots mix
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon fish sauce
  • 1/2 teaspoon sugar
  • Pinch of white pepper
  • 2 tablespoons chopped green onions for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken or shrimp, if using, and cook until heated through. Remove from the skillet.
  3. Add the chopped onion to the skillet and cook for 2 minutes until softened.
  4. Add the diced pineapple and frozen peas and carrots. Cook for 2-3 minutes.
  5. Push the vegetables to one side of the skillet. Pour the beaten eggs onto the empty side and quickly scramble until just set.
  6. Add the cold rice to the skillet. Break up any clumps with your spatula.
  7. Return the cooked chicken or shrimp to the skillet.
  8. In a small bowl, whisk together the soy sauce, fish sauce, sugar, and white pepper. Pour the sauce over the rice mixture.
  9. Stir everything together well, tossing constantly, until the rice is heated through and lightly coated with the sauce, about 3-4 minutes.
  10. Taste and adjust seasoning if needed.
  11. Serve immediately, garnished with chopped green onions.

Notes

  • Using cold, day-old rice makes the best fried rice; it prevents mushiness.
  • Feel free to substitute the protein with tofu or skip it for a vegetarian version.
  • For extra flavor, add a dash of sesame oil at the very end.
