Make these simple pizza muffins for a fun, bite-sized snack perfect for kids’ lunchboxes or quick parties.

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni slices
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a standard 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the mozzarella cheese and pepperoni slices into the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with a small spoonful of pizza sauce.
  8. Sprinkle the tops with the grated Parmesan cheese.
  9. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These cheesy pizza cupcakes freeze well. Cool them completely, then place them in a freezer-safe bag for up to three months. Thaw overnight or reheat from frozen at 350 degrees Fahrenheit for about 15 minutes.
  • You can substitute the pepperoni with cooked, crumbled sausage or finely chopped bell peppers for variety.
  • For extra flavor, brush the tops lightly with garlic butter immediately after they come out of the oven.
