- 2 lbs pork shoulder, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup dry red wine (optional)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 1 pound potatoes, peeled and cubed
- 3 large carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
- Salt and black pepper to taste
- Season the pork cubes generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Brown the pork in batches on all sides; remove the pork and set it aside.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
- Transfer the onion and garlic mixture to the slow cooker.
- Add the browned pork, beef broth, red wine (if using), thyme, rosemary, and bay leaf to the slow cooker. Stir gently.
- Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the pork is very tender.
- Add the potatoes, carrots, and celery to the slow cooker. Stir in the Worcestershire sauce.
- Continue cooking on LOW for another 1 to 1.5 hours, or until the vegetables are tender.
- Remove the bay leaf. Stir the cornstarch slurry into the stew. Cover and cook on HIGH for 15 minutes, or until the stew has thickened slightly.
- Taste and adjust seasoning with salt and pepper before serving.
Notes
- For a richer flavor, sear the vegetables briefly in the skillet after browning the pork before adding them to the slow cooker.
- If you do not have beef broth, use chicken broth or water with 2 bouillon cubes.
- This stew freezes well for future easy meals.
