1 (about 1 to 1.5 pound) pork tenderloin
1 tablespoon olive oil
Salt and black pepper to taste
1 cup apple cider
1/4 cup brown sugar, packed
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
Instructions
Preheat your oven to 400°F (200°C).
Rub the pork tenderloin all over with olive oil. Season generously with salt and pepper.
Sear the pork in an oven-safe skillet over medium-high heat for 2-3 minutes per side until nicely browned.
While the pork sears, prepare the glaze: In a small saucepan, combine the apple cider, brown sugar, apple cider vinegar, Dijon mustard, and minced garlic.
Bring the mixture to a boil over medium heat, then reduce the heat and simmer for about 10-12 minutes, stirring occasionally, until the glaze has reduced by about half and coats the back of a spoon.
Brush half of the prepared glaze over the seared pork tenderloin in the skillet.
Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until a meat thermometer inserted into the thickest part reads 145°F (63°C).
Remove the pork from the oven. Brush with the remaining glaze. Let the pork rest on a cutting board for 5-10 minutes before slicing and serving.
Notes
For best results, use a meat thermometer to check for doneness; pork should be slightly pink in the center.
You can substitute maple syrup for brown sugar in the glaze if you prefer a different sweetness profile.
If you do not have an oven-safe skillet, sear the pork on the stovetop and then transfer it to a baking dish before glazing and roasting.
