1 lb raw potatoes, peeled and grated
1 lb cooked, cooled potatoes, riced or mashed
1 large egg
1 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon nutmeg
1/2 cup all-purpose flour (or potato starch for binding)
2 tablespoons butter (for serving)
Instructions
Peel and grate the raw potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. Discard the liquid.
In a large bowl, combine the squeezed raw potatoes, the cooked mashed potatoes, egg, salt, pepper, and nutmeg. Mix well.
Gradually mix in the flour until a cohesive dough forms. Do not overmix.
Bring a large pot of salted water to a gentle simmer (do not boil rapidly).
Moisten your hands with water and form the dough into uniform balls, about 2 inches in diameter.
Carefully drop the dumplings into the simmering water. Do not overcrowd the pot.
Cook the dumplings for about 15 to 20 minutes. They will float to the surface when they are nearly done.
Remove the cooked dumplings with a slotted spoon and drain them well.
Melt the butter in a skillet over medium heat. Add the cooked dumplings and gently roll them in the butter until lightly browned on all sides for a slight crust.
Serve immediately as a side dish with gravy or roast meat.
Notes
For a traditional German texture, use potato starch instead of flour for binding if you want a smoother interior.
If you have leftover mashed potatoes, you can skip grating the cooked portion and use only the mashed potatoes and raw grated potatoes.
To prevent sticking, keep the formed dumplings covered with a damp cloth while you finish shaping the batch.
