- 1 pound whole wheat pasta
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese (optional)
- For the Dressing:
- 1/4 cup extra virgin olive oil
- 3 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- Cook whole wheat pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, chickpeas, cherry tomatoes, cucumber, red onion, parsley, basil, and Kalamata olives.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, oregano, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- If using, sprinkle with crumbled feta cheese.
- Serve immediately or chill for later.

- For extra protein, you can add grilled chicken breast or canned tuna.
- Adjust the seasoning to your preference.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
