  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup pumpkin puree (not pie filling)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 12 ounces fettuccine or pasta of your choice

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add onion and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in the pumpkin puree, heavy cream, and nutmeg. Cook gently until the sauce is heated through. Do not boil.
  6. Reduce heat to low. Gradually stir in the Parmesan cheese until the sauce is smooth and creamy.
  7. Season the sauce generously with salt and pepper.
  8. Add the drained pasta to the skillet with the sauce. Toss to coat completely.
  9. If the sauce is too thick, add reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
  10. Serve immediately with extra Parmesan cheese on top.

Notes

  • Use fresh Parmesan cheese for the best melting quality.
  • For a richer flavor, substitute some of the heavy cream with half-and-half.
  • If you prefer a thinner sauce, increase the amount of reserved pasta water used.
