  • 1 cup warm milk (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • ¼ cup granulated sugar
  • 1 cup pumpkin puree (not pie filling)
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 large eggs, at room temperature
  • ⅓ cup unsalted butter, melted and slightly cooled
  • 4 cups all-purpose flour, plus more for dusting
  • 2 tablespoons fresh sage, finely chopped
  • 1 tablespoon unsalted butter, melted (for brushing)
  • Flaky sea salt (optional, for topping)

Instructions

  1. In a large bowl, combine warm milk, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Stir in pumpkin puree, salt, cinnamon, nutmeg, and eggs.
  3. Add melted butter and mix well.
  4. Gradually add flour, about 1 cup at a time, mixing until a shaggy dough forms.
  5. Add chopped sage and continue mixing until the dough comes together.
  6. Turn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  7. Place the dough in a lightly greased bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  8. Punch down the dough and divide it into 12 equal portions.
  9. Shape each portion into a ball and place them close together in a greased 9×13 inch baking pan.
  10. Cover the pan and let the rolls rise for another 30-45 minutes.
  11. Preheat your oven to 375°F (190°C).
  12. Bake for 20-25 minutes, or until golden brown.
  13. Brush the tops with melted butter immediately after removing from the oven. Sprinkle with flaky sea salt if desired.
