4 slices of bread (brioche, challah, or thick-cut white bread work best)
2 large eggs
1/4 cup milk
1 tablespoon pumpkin puree
1 teaspoon pumpkin pie spice
1 teaspoon granulated sugar
1/2 teaspoon vanilla extract
Butter or oil for cooking
Optional toppings: maple syrup, whipped cream, cinnamon, powdered sugar
Instructions
In a shallow dish, whisk together eggs, milk, pumpkin puree, pumpkin pie spice, sugar, and vanilla extract until well combined.
Dip each slice of bread into the egg mixture, ensuring both sides are coated.
Heat butter or oil in a skillet over medium heat.
Cook the bread for 2-3 minutes per side, until golden brown and cooked through.
Serve immediately with your favorite toppings.
Notes
For a richer flavor, use half-and-half or heavy cream instead of milk.
If you don’t have pumpkin pie spice, you can make your own by combining 1 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon nutmeg, and a pinch of cloves.
Adjust the sweetness to your preference by adding more or less sugar.
