  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup pumpkin puree
  • 1 tablespoon chia seeds
  • 1-2 tablespoons maple syrup or honey (to taste)
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of salt
  • Optional toppings: chopped nuts, granola, extra maple syrup

Instructions

  1. In a jar or container, combine the rolled oats, milk, pumpkin puree, chia seeds, maple syrup (or honey), pumpkin pie spice, and salt.
  2. Stir well until all ingredients are thoroughly mixed.
  3. Cover the container and refrigerate overnight, or for at least 4 hours, to allow the oats to soften and the mixture to thicken.
  4. In the morning, stir the overnight oats. If too thick, add a splash more milk to reach desired consistency.
  5. Add your favorite toppings and enjoy!
