1/2 cup rolled oats
1/2 cup milk (dairy or non-dairy)
1/4 cup pumpkin puree
1 tablespoon chia seeds
1-2 tablespoons maple syrup or honey (to taste)
1/2 teaspoon pumpkin pie spice
Pinch of salt
Optional toppings: chopped nuts, granola, extra maple syrup
Instructions
In a jar or container, combine the rolled oats, milk, pumpkin puree, chia seeds, maple syrup (or honey), pumpkin pie spice, and salt.
Stir well until all ingredients are thoroughly mixed.
Cover the container and refrigerate overnight, or for at least 4 hours, to allow the oats to soften and the mixture to thicken.
In the morning, stir the overnight oats. If too thick, add a splash more milk to reach desired consistency.
Add your favorite toppings and enjoy!
Notes
Adjust the sweetness to your preference.
For a thicker consistency, add a bit more chia seeds. For a thinner consistency, add more milk.
These oats can be stored in the refrigerator for up to 3-4 days.
