  • 1 teaspoon salt
  • 1 1/4 cups milk
  • 1 cup pumpkin puree
  • 1 large egg
  • 3 tablespoons melted butter
  • 2 tablespoons white sugar
  • For the Maple Glaze:
  • 1/2 cup maple syrup
  • 2 tablespoons butter

Instructions

  1. In a large bowl, sift together the flour, baking powder, cinnamon, nutmeg, cloves, ginger, and salt.
  2. In a separate bowl, whisk together the milk, pumpkin puree, egg, melted butter, and sugar.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a lightly oiled griddle or non-stick skillet over medium-high heat.
  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. While the pancakes are cooking, prepare the maple glaze. In a small saucepan, heat the maple syrup and butter over medium heat until the butter is melted and the mixture is warm.
  8. Serve the pancakes warm, drizzled with the maple glaze.

Notes

  • For a richer flavor, you can add a pinch of allspice to the spice blend.
  • Ensure your pumpkin puree is not pumpkin pie filling, which contains added sugar and spices.
