  • 1 pound flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 medium yellow onion, cut into wedges
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or vegetarian substitute)
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. In a bowl, toss the sliced flank steak with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Set aside for 10 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the beef in a single layer (work in batches if necessary) and sear until browned, about 2-3 minutes per side. Remove the beef from the skillet and set aside.
  3. Add the bell peppers and onion to the same skillet. Stir-fry for 3-4 minutes until slightly tender-crisp.
  4. Add the minced garlic and grated ginger to the vegetables. Cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together the beef broth, 2 tablespoons soy sauce, oyster sauce, and brown sugar. Pour this sauce mixture into the skillet. Bring to a simmer.
  6. Return the cooked beef to the skillet. Stir to coat everything in the sauce.
  7. Pour in the cornstarch slurry while stirring constantly. Cook for about 1 minute until the sauce thickens enough to coat the back of a spoon.
  8. Remove from heat. Stir in the sesame oil. Serve immediately over steamed white rice.

Notes

  • Slicing the beef against the grain makes it much more tender.
  • Do not overcrowd the pan when searing the beef; cook in batches for a proper sear.
  • For extra flavor, add a dash of white pepper to the sauce mixture.
  • You can substitute the bell peppers with broccoli florets or snow peas for variety.
