1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 tablespoon olive oil
1/4 cup soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon minced fresh ginger
4 cloves garlic, minced
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
Green onions, sliced, for garnish

Instructions
Pat the chicken pieces dry with paper towels. Season lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, reduce the heat to medium. Add the minced garlic and ginger. Cook for about 30 seconds until fragrant.
Pour in the soy sauce, honey, and rice vinegar. Bring the mixture to a simmer, stirring well.
Whisk in the cornstarch slurry. Continue to cook, stirring constantly, until the sauce thickens into a glossy glaze, about 1-2 minutes.
Return the cooked chicken to the skillet. Toss gently to coat every piece completely in the sticky honey garlic sauce.
Stir in the sesame oil and red pepper flakes, if using. Cook for one more minute.
Serve immediately over rice or noodles. Garnish generously with sliced green onions and sesame seeds.
Notes
For extra crispy chicken, lightly dredge the raw chicken pieces in a small amount of cornstarch before searing them in step 2.
Chicken thighs work wonderfully here and stay moister than breasts.
If you prefer a less sweet glaze, reduce the honey by one tablespoon and add a splash of water.
