A comforting and creamy potato leek soup that’s quick to make on the stovetop, perfect for a simple meal.

Ingredients

  • 2 tablespoons unsalted butter
  • 3 large leeks, white and light green parts only, washed and sliced
  • 2 cloves garlic, minced
  • 1 pound Yukon Gold potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • Salt and black pepper to taste
  • Fresh chives, chopped, for garnish (optional)

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat.
  2. Add leeks and cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Add diced potatoes and broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until potatoes are tender.
  5. Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
  6. Return the soup to the pot. Stir in milk and heat gently, do not boil.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh chives if desired.

  • For a richer soup, you can use heavy cream instead of milk.
