Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into tenders
  • 1 cup cooked quinoa
  • 1/2 cup gluten-free all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 cup olive oil or cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine the cooked quinoa, gluten-free flour, salt, pepper, garlic powder, and paprika. Mix well.
  3. In another shallow dish, beat the eggs.
  4. Dip each chicken tender first into the beaten eggs, ensuring it’s fully coated.
  5. Then, dredge the egg-coated tender in the quinoa mixture, pressing gently to adhere the crust.
  6. Place the coated tenders onto the prepared baking sheet.
  7. Drizzle with olive oil or spray lightly with cooking spray.
  8. Bake for 20-25 minutes, flipping halfway through, until the chicken is cooked through and the crust is golden brown and crispy.

Notes

  • Ensure your quinoa is fully cooked and slightly cooled before using.
  • For an extra crispy crust, you can lightly toast the quinoa before mixing it with the other dry ingredients.
  • Serve with your favorite dipping sauces like honey mustard, BBQ sauce, or ketchup.
