Ingredients
Scale
8 whole wheat tortillas
1 cup cream cheese, softened
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped yellow bell pepper
1/4 cup finely chopped cucumber
1/4 cup finely grated carrot
2 tablespoons finely chopped fresh chives
Salt and black pepper to taste
Instructions
In a medium bowl, combine the softened cream cheese with the chopped red bell pepper, yellow bell pepper, cucumber, grated carrot, and chives.
Season with salt and black pepper to your liking. Mix well until all ingredients are evenly distributed.
Lay one tortilla flat on a clean surface. Spread a generous layer of the cream cheese and veggie mixture evenly over the entire surface of the tortilla, leaving a small border around the edges.
Tightly roll up the tortilla from one end to the other.
Repeat steps 3 and 4 with the remaining tortillas and cream cheese mixture.
Using a sharp knife, slice each rolled tortilla into 1-inch thick pinwheels.
Arrange the pinwheels on a serving platter and serve immediately, or store in an airtight container in the refrigerator for later.
Notes
For a dairy-free option, use your favorite dairy-free cream cheese spread.
Feel free to add other finely chopped vegetables like spinach or purple cabbage for even more color.
Ensure all vegetables are finely chopped or grated so the pinwheels roll up easily and hold their shape.
