These Raspberry Rosé Jelly Shots are a festive and elegant treat perfect for ringing in the New Year. They combine the bubbly effervescence of rosé with the sweet tartness of raspberries for a delightful party bite.

2 cups sparkling rosé wine
1/4 cup cold water
2 envelopes unflavored gelatin
1/4 cup granulated sugar
1/2 cup fresh raspberries
Optional: edible glitter for garnish
Instructions
In a small bowl, sprinkle the unflavored gelatin over the cold water. Let it bloom for 5-10 minutes until softened.
In a saucepan, gently heat 1 cup of the rosé wine with the granulated sugar over medium-low heat. Stir until the sugar is completely dissolved. Do not boil.
Remove the saucepan from the heat. Add the bloomed gelatin mixture and stir until it is fully dissolved.
Pour the remaining 1 cup of rosé wine into the saucepan. Stir to combine.
Spoon a few fresh raspberries into the bottom of each shot glass or mold.
Carefully pour the rosé jelly mixture into the shot glasses, filling them about three-quarters full.
Chill in the refrigerator for at least 4 hours, or until firm.
Before serving, you can optionally garnish with a sprinkle of edible glitter.
Notes
For a stronger raspberry flavor, you can muddle a few raspberries at the bottom of each glass before adding the jelly mixture.
Ensure your rosé is chilled before using it.
If you don’t have shot glasses, you can use a mini muffin tin lined with paper liners.
