Bake festive red velvet cupcakes with a classic cream cheese frosting. This recipe is perfect for any occasion.

  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar
  • For the Frosting:
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In a separate medium bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
  5. In a small bowl, stir the red food coloring into the white vinegar. Add this mixture to the cupcake batter and gently fold it in until the batter is evenly colored.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  8. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cupcakes are cooling, prepare the frosting. In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy.
  10. Gradually add the powdered sugar, beating until well combined and fluffy. Stir in the vanilla extract.
  11. Once the cupcakes are completely cool, frost them generously with the cream cheese frosting.
