1 pound beets, trimmed and scrubbed
1 tablespoon olive oil
Salt and black pepper to taste
4 ounces goat cheese, crumbled
4 cups mixed greens
2 tablespoons balsamic vinegar
1 tablespoon honey
1/4 cup chopped walnuts (optional)
Instructions
Preheat your oven to 400 degrees F (200 degrees C).
Wrap the beets tightly in foil and roast them until tender, about 45 to 60 minutes.
Let the beets cool slightly, then rub the skins off; they should slip off easily. Cut the beets into wedges or cubes.
In a small bowl, whisk together the balsamic vinegar and honey to create the dressing.
In a large bowl, toss the mixed greens with half of the dressing.
Arrange the dressed greens on plates. Top with the roasted beets and crumbled goat cheese.
Drizzle the remaining dressing over the salad and sprinkle with chopped walnuts, if using. Serve immediately.
Notes
Roasting beets brings out their natural sweetness, which pairs wonderfully with the goat cheese tang.
You can use pre-cooked beets to save time, though roasting fresh beets gives the best flavor.
For a richer flavor, toast the walnuts lightly before adding them to the salad.
