1 (15-ounce) can chickpeas (garbanzo beans), rinsed, drained, and thoroughly dried
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon black pepper
Optional seasonings: ½ teaspoon paprika, ½ teaspoon garlic powder, ¼ teaspoon cumin, or a pinch of cayenne pepper for a kick
Instructions
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper for easy cleanup.
In a medium bowl, toss the dried chickpeas with olive oil, salt, and black pepper. If using, add your desired optional seasonings and mix well to coat.
Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they are not crowded; this helps them get crispy.
Roast for 20-30 minutes, stirring halfway through, until the chickpeas are golden brown and crunchy.
Remove from the oven and let them cool completely on the baking sheet. They will become even crispier as they cool.
Serve immediately or store in an airtight container at room temperature for up to 3-4 days.
Notes
Drying the chickpeas thoroughly is crucial for crispiness. Pat them dry with a clean kitchen towel or paper towels.
For extra crispiness, you can remove the loose skins from the chickpeas after rinsing, though this is optional.
