1 (15-ounce) can chickpeas, rinsed and drained
1 whole head of garlic
1/4 cup tahini
2 tablespoons fresh lemon juice
2 tablespoons ice water (or more, for thinning)
1 tablespoon olive oil, plus more for serving
1/2 teaspoon ground cumin
1/4 teaspoon salt
Instructions
Preheat your oven to 400°F (200°C).
Slice about 1/4 inch off the top of the whole garlic head to expose the cloves. Drizzle the exposed top with a little olive oil.
Wrap the garlic head tightly in aluminum foil. Roast for 30 to 40 minutes, or until the cloves are very soft and golden brown. Let it cool slightly.
Once cool enough to handle, squeeze the soft roasted garlic cloves out of their skins into a food processor.
Add the rinsed chickpeas, tahini, lemon juice, 1 tablespoon of olive oil, cumin, and salt to the food processor.
Process until the mixture starts to become smooth.
With the food processor running, slowly add the ice water, one tablespoon at a time, until the hummus reaches your desired creamy consistency. You may need a little more or less water.
Taste and adjust salt or lemon juice if needed.
Transfer the hummus to a serving bowl. Drizzle with extra olive oil before serving.
Notes
For the creamiest hummus, remember to peel the skins off the roasted garlic cloves before adding them.
If you want an even smoother texture, you can peel the skins off the chickpeas before blending.
This hummus tastes best after resting in the refrigerator for about 30 minutes, allowing the flavors to meld.
