Create incredibly creamy and deeply flavorful mashed potatoes by roasting the garlic first. Roasting mellows the garlic, making it sweet and spreadable. This recipe brings a comforting taste of our kitchen to yours.

  • 2 pounds russet potatoes, peeled and quartered
  • 1 whole head of garlic
  • 3 tablespoons olive oil, divided
  • 1/2 cup heavy cream, warmed
  • 4 tablespoons unsalted butter, softened
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice about 1/4 inch off the top of the whole garlic head to expose the cloves.
  3. Place the garlic head on a small piece of aluminum foil. Drizzle 1 tablespoon of olive oil over the exposed cloves. Wrap the foil loosely around the garlic.
  4. Roast the garlic for 30 to 40 minutes, or until the cloves are soft and golden brown. Set aside to cool slightly.
  5. Place the quartered potatoes in a large pot and cover them with cold, salted water.
  6. Bring the water to a boil, then reduce heat and simmer for 15 to 20 minutes, until the potatoes are fork-tender.
  7. Drain the potatoes well and return them to the hot, empty pot for one minute to dry out any excess moisture.
  8. Squeeze the soft roasted garlic pulp out of the skins into the pot with the potatoes.
  9. Add the butter, warm heavy cream, remaining 2 tablespoons of olive oil, salt, and pepper to the pot.
  10. Mash the potatoes thoroughly using a potato masher or a ricer until they reach your desired creaminess. Mix until just combined.
  11. Taste and adjust seasoning if needed. Serve immediately.

Notes

  • Use starchy potatoes like Russets for the fluffiest texture.
  • Warming the cream helps keep the potatoes hot while mashing.
  • Do not overmix the potatoes once you add the liquid; this can make them gluey.
