This recipe provides simple instructions for roasting sweet potatoes to achieve a soft interior and slightly caramelized exterior.

  • 2 large sweet potatoes (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash and dry the sweet potatoes thoroughly. You may peel them or leave the skin on, based on your preference.
  3. Cut the sweet potatoes into uniform 1-inch cubes. Uniform size helps them cook evenly.
  4. Place the cubed sweet potatoes in a large bowl. Drizzle with olive oil.
  5. Sprinkle the salt, pepper, and garlic powder over the potatoes. Toss everything together until the potatoes are evenly coated.
  6. Spread the seasoned sweet potatoes in a single layer on a large baking sheet. Do not overcrowd the pan; use two sheets if necessary for better crisping.
  7. Roast for 25 to 35 minutes, stirring halfway through the cooking time.
  8. The potatoes are done when they are tender when pierced with a fork and the edges show light browning.
  9. Remove from the oven and serve immediately.

Notes

  • For sweeter potatoes, substitute 1 tablespoon of maple syrup for the garlic powder and toss before roasting.
  • For crispier edges, ensure the potatoes are in a single layer and the oven is fully preheated to 400°F.
  • If you prefer whole roasted sweet potatoes, pierce them several times with a fork and bake for 45 to 60 minutes until soft.
