1 pound good quality white chocolate, chopped
1/2 cup heavy cream
1 cup packed light brown sugar
1/4 cup unsalted butter
1 teaspoon sea salt
1 teaspoon vanilla extract
2 cups small pretzel twists
1/2 cup chopped nuts (optional)
Flaky sea salt, for topping
Instructions
Line a baking sheet with parchment paper.
In a medium saucepan, melt the white chocolate over low heat, stirring constantly until smooth. Alternatively, melt the white chocolate in a double boiler.
In a separate saucepan, combine the heavy cream, brown sugar, and butter. Cook over medium heat, stirring until the sugar dissolves.
Bring the mixture to a boil and cook for 5-7 minutes, stirring occasionally, until it thickens into a caramel.
Remove from heat and stir in the sea salt and vanilla extract.
Gently fold the pretzels and any optional nuts into the caramel.
Pour the pretzel mixture evenly over the prepared baking sheet.
Sprinkle generously with flaky sea salt.
Let the bark set at room temperature for at least 1 hour, or until firm.
Once set, break the bark into pieces.
