This breakfast casserole combines hashbrowns, sausage, eggs, and cheese into one hearty dish. It is easy to assemble and perfect for a weekend morning or potluck.
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
In a large skillet, cook the breakfast sausage over medium heat until browned and crumbled. Drain off any excess grease.
Spread the thawed hashbrowns evenly in the bottom of the prepared baking dish.
Layer the cooked sausage over the hashbrowns.
Sprinkle the shredded cheddar cheese evenly over the sausage layer.
In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Pour the egg mixture evenly over the cheese, sausage, and hashbrowns in the baking dish.
Bake for 45-55 minutes, or until the eggs are set and the casserole is lightly golden brown on top. A knife inserted into the center should come out clean.
Remove from the oven and let stand for 5-10 minutes before serving.
Notes
For extra flavor, add a pinch of onion powder or garlic powder to the egg mixture.
You can prepare this casserole the night before. Assemble all layers, cover, and refrigerate. In the morning, uncover and bake as directed, adding an extra 10-15 minutes to the baking time if baking from cold.
