1 pound Italian sausage, casings removed
1 medium onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cups chicken broth
2 pounds potatoes, peeled and diced
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon salt
1 cup heavy cream
1/2 cup shredded cheddar cheese (optional)
2 tablespoons all-purpose flour
Instructions
Brown the Italian sausage in a large pot over medium heat. Drain off excess grease.
Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 minutes.
Stir in the diced potatoes, chicken broth, thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 to 20 minutes.
In a small bowl, whisk the flour with 1/4 cup of the heavy cream until smooth.
Stir the flour mixture and the remaining heavy cream into the soup. Cook, stirring constantly, until the soup thickens slightly, about 3 minutes.
If using, stir in the shredded cheddar cheese until melted.
Serve hot.
Notes
For a thicker soup, mash about one cup of the cooked potatoes against the side of the pot before adding the cream.
You can substitute mild Italian sausage for spicy if you prefer less heat.
This soup freezes well if you omit the heavy cream and cheese until reheating.
