Make this hearty, creamy sausage potato soup in one pot for an easy weeknight meal.

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 2 pounds potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tablespoons all-purpose flour

Instructions

  1. Brown the Italian sausage in a large pot over medium heat. Drain off excess grease.
  2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 minutes.
  3. Stir in the diced potatoes, chicken broth, thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 to 20 minutes.
  4. In a small bowl, whisk the flour with 1/4 cup of the heavy cream until smooth.
  5. Stir the flour mixture and the remaining heavy cream into the soup. Cook, stirring constantly, until the soup thickens slightly, about 3 minutes.
  6. If using, stir in the shredded cheddar cheese until melted.
  7. Serve hot.

Notes

  • For a thicker soup, mash about one cup of the cooked potatoes against the side of the pot before adding the cream.
  • You can substitute mild Italian sausage for spicy if you prefer less heat.
  • This soup freezes well if you omit the heavy cream and cheese until reheating.
