Simple Sautéed Zucchini, Mushrooms, and Onions

A quick and easy recipe for cooking zucchini, mushrooms, and onions together in a skillet until tender-crisp.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, sliced
  • 8 ounces cremini mushrooms, sliced
  • 2 medium zucchinis, quartered lengthwise and sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onion to the skillet and cook for 3 to 4 minutes until it begins to soften.
  3. Add the sliced mushrooms to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the mushrooms release their liquid and start to brown.
  4. Add the sliced zucchini, minced garlic, and dried thyme to the skillet.
  5. Sauté for another 4 to 6 minutes, stirring frequently, until the zucchini is tender-crisp and the garlic is fragrant. Do not overcook the zucchini.
  6. Season the vegetables with salt and black pepper to your preference.
  7. Remove from heat and garnish with fresh chopped parsley before serving.

Notes

  • For extra flavor, add a splash of vegetable broth or white wine during the last few minutes of cooking to deglaze the pan slightly.
  • You can substitute dried thyme with 1/2 teaspoon of dried Italian seasoning blend.
  • This side dish pairs well with grilled chicken or steak.
