1 small onion, chopped
2 cloves garlic, minced
1 (15-ounce) can pumpkin puree
1/2 cup vegetable broth
1/2 cup heavy cream or full-fat coconut milk
1/4 cup grated Parmesan cheese (optional, omit for vegan)
2 tablespoons fresh sage, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces pasta of your choice
Instructions
Cook pasta according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Stir in minced garlic and cook for 1 minute more until fragrant.
Add pumpkin puree, vegetable broth, heavy cream (or coconut milk), Parmesan cheese (if using), chopped sage, salt, and pepper to the skillet.
Bring the sauce to a gentle simmer, then reduce heat to low and cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly.
Serve immediately, garnished with extra fresh sage or Parmesan cheese if desired.
Notes
For a richer flavor, roast fresh pumpkin instead of using canned pumpkin puree.
Adjust the consistency of the sauce by adding more vegetable broth or cream as needed.
