- 1 pound breakfast sausage
- 1 large sweet potato, peeled and diced
- 1 small onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 large eggs (optional)
- Fresh parsley, chopped (for garnish)
- In a large skillet, cook the breakfast sausage over medium-high heat until browned. Drain off excess grease.
- Add the diced sweet potato, chopped onion, and chopped bell pepper to the skillet.
- Stir in the smoked paprika and garlic powder. Season with salt and pepper.
- Cover the skillet and cook for 15-20 minutes, or until the sweet potatoes are tender, stirring occasionally.
- If using, make two wells in the hash and crack an egg into each. Cover and cook until the eggs are set to your liking.
- Garnish with fresh parsley before serving.
